We recently visited a village near Krishna Giri in Tamil Nadu. It is just 3 hours of drive from Bangalore Karnataka. I visited the plam jaggery process of manufacturing in a very natural way. This is the place Organic Sphere source palm jaggery as well.
Step 1: Nera is extracted from the palm tree. This is generally done between 2-5 am in the wee hours of morning

Step 2: Then the extracted Nera is poured in a container and heated till it is converted to a syrup like thick liquid.
